Our food celebrates the tastes of Oaxaca, Chile, Chocolate, Corn and Coffee.

The combination of simple ingredients compliment the palate with a balance of aroma and flavours that are equally rustic and refined.  A taste that echos the flavours of childhood in Oaxaca enriched from the heritage of the area. 

What’s in a name?

The name el papalote (the kite) is inspired by the Huaves (Ikoots) of the Isthmus of the Oaxaca coast. The wind in the area is very strong making the waves dangerous at times. Local fishermen (pescadores) traditionally use kites as a tool to set and retrieve fishing nets in the ocean working with the wind.
